What do you do with a couple of thin slices of Black Forest ham, some imitation crabmeat sticks, a smallish zucchini, and some scallions which have been sitting in the fridge too long?
You consider using them in an impromptu fried rice created by stir frying (in this case I used grapeseed oil which is good for high temp frying) some onions, sliced baby bella mushrooms (well on their way out but not foul smelling), julienned carrots and zucchini, minced garlic, and pine nuts, adding the diced crabmeat and ham, some sliced scallions, and stirring in cold cooked rice, which you break apart with your hand and then drizzle over it all some kecap manis (Indonesian sweet soy sauce) and fish sauce (Thai or Vietnamese) – then taste for seasoning. I thought some Asian sesame oil would be a good addition, but used too much and it damped the flavor, which was perfect before I added it!
There is no default recipe for fried rice. You just have to have some cooked, cold rice. The rest of the ingredients are as you wish! If you research fried rice on the web you will find as many recipes as you’ll find links, and then some. It can make a very satisfying meal when you think you have nothing in the house to eat!
