This evening I decided to combine crusted tofu leftovers, cut into little squares with some repurposed curried rice pilaf. So good together! See the tofu recipe here: http://www.pbase.com/isabel95/image/155327717
This curried rice was made with Jasmine Rice that I had cooked with broth. (I use a rice cooker - the same one I bought when we adopted Sunny and Peter in 1978! Let's hear it for Hitachi!)
To make the rice I sauteed vertically cut onion slices and defrosted peas with garlic and then added the rice and tossed. To that I added raisins, lightly browned pignolia nuts and a teaspoon of curry powder.
Very satisfying meal!
