Kath's Muffins

A neighbor dropped these by one day and I had to have the recipe. They are outstandingly delicious and also healthful. I couldn't finish my large one this morning. Maybe next time I'll use cupcake tins.
Makes 24 regular size muffins or 12 large-pan muffins.
You pick which fruit and nuts to use in each batch.

Preheat oven to 400° and grease muffin pans.

Combine all dry ingredients:
3 C. oats (old-fashioned or quick cook)
1 C. whole wheat flour
1/2 C. each of wheat germ and Wheat bran (or any combo that equals 1 cup)
1 C. any chopped nuts or raisins
2/3 C. brown sugar
1 Tbsp. baking powder
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
handful of chia seeds, ground flax seeds, etc. (optional)

Cut up fruit:
1 C. chopped apples, peaches, bananas, or whole blueberries) (hers contained blueberries and banana)

Mix together all liquids:
1 1/3 C. milk (cow, almond, rice...)
2/3 C. oil
2 eggs, beaten (or egg beaters)
1/2 C. agave or honey

Add liquids and fruit to dry mixture.
Bake ~20 minutes for regular size muffins, or 24 min for large-pan muffins
