Good Eats ~ Bad Times

Casa de Sands

Feeling productive to make up for the lost hour last night due to Daylight Savings Time I am pulling together a batch of chili for dinner. While I love chili, it's always a few days later that makes it best.

When I was in the Navy, there was a endless supply of ChiliMac at midrats. Midrats is the midnight rations sailors are fed who work the overnight shift. Basically leftovers and eggs if your lucky. It's the least liked meal of the day since it's warmed up leftovers from the previous day. However there is one exception to this meal! ChiiMac…

ChiliMac at 1 AM coming down from the flight deck was always a highlight of my day. Being deployed sucks. Working in the cold sucked. Working in the dark sucked. Losing a tool and having to tell the Maintenance Master Chief sucked. Being away from home sucked. The pay sucked. Lots of things sucked. A simple bowl of Navy issue chilimac made life good.

What is Chili without beans?! And then top it off with some sort of hot sauce! Or, in our house, make two batches, one with atleast 3 different hot sauces, ranging in heat - let is relax in the fridge for a few days... Love it!
