I am continuing with my experiments in making whisky. I have been using oak chips. I did some calculations to figure out the surface to volume ratios of whisky barrels. I then laid out the chips to measure their surface area. This is one tablespoon of chips. For the batches I started today, I figured to try about 4 tablespoons of chips for 250 milliliters of alcohol. We can't legally distill alcohol here in the US, so I use Everclear. I cut it back to 120 proof (a not uncommon cask strength) and made up some bottles to see what happens. Stay tuned.
