Juan suggested me to try a simple, but delicious dish, typical of the mountains around Malaga.
it's called
"Manteca con lomo"
This is a traditional way of cooking and preserving meat of pork under layer of melted fat or lard, I don’t know exactly…. One can use any piece of pork, like shoulder or ham.
In some areas of Andalusia they also preserve sausages this way, I was told.
In all case it’s excellent.
