Dinner tonight was Pizza Style Braised Beef Sandwich with Pasta.

Take your favorite tough cut of meat and have the meat counter or butcher slice it into rounds about 4" in diameter and 1/2" thick. In a large pot, heat some olive oil then add 1 diced onion, 1 diced bell pepper and 2 cloves minced garlic. Sweat on medium heat until onion is translucent.

Add the beef and cook for about 10 minutes, stirring once so that both sides of the cuts have a chance to gain a bit of brown.

Pour 4 cups of your favorite pasta sauce over the mixture (homemade would be great!). Add oregano, basil, additional garlic, and a pinch of red pepper flakes.

Turn to low and simmer for about 2 to 3 hours, stirring occasionally. Be careful not to break up the meat when it starts getting tender.

Put in an airtight container and keep in the fridge for a night later in the week when you get home really late from work and are starving.

Make pasta. Cut whole wheat sub rolls lengthwise and drizzle with olive oil. Toast under broiler on both sides. Lay cuts of meat on one side of each roll (with extra sauce!) and lay sandwich-size pepperoni on the other side of the roll. Toast under broiler until hot. Sprinkle both sides with shredded mozzarella and put under the broiler again til cheese is melty and bubbly. Put sandwiches together. Serve pasta with extra sauce from meat.
