deep fried crisp pork

This is kind of like the finger foods



Ingredients:

half pound pork

1/2 tsp wild pepper( optional,it is also called sichuan peppercorn )

1tbsp chili garlic sauce(lee Kum Kee)

1/2 tsp salt

1 tbsp cooking wine

1/2 cup starch

1/4 cup all-purpose flour

2 eggs

4 cups oil for deep frying

1.Beat eggs ,and then mix eggs together starch & flour until the mixture reaches a thick, batter-like consistency.

2.Slice pork to 1/8in thin and 1.5in length.Mix pork with wild pepper,chili garlic sauce,salt, cooking wine,then mix them with egg batter.

3.Preheat the oil in a large pot to 375 degrees F.

4.Use tablespoon completely coat 2 or 3 pieces of pork with batter and gently place into the hot oil and keep them sticking together. Cook in batches 5 tablespoons until golden brown. Allow the oil to return to 375 degrees F between batches.
