I believe these are called Bocadillos
Definition: Sandwich on a baguette. Sandwiches or bocadillos in Spain are very different than sandwiches in the USA. Generally, a bocadillo will be a 6 to 8-inch long portion of baguette, sliced in half and filled with chorizo sausage or another kind of cold cut of sausage. Spaniards do not use mayonnaise or lettuce on bocadillos, but may include slices of tomato or they may rub a sliced tomato on the bread to moisten it.
