MORNING GLORY MUFFINS
2 c. peeled, diced apple
2 c. grated carrot or zucchini, or a combination
¾ c. sugar
2 eggs, lightly beaten
½ c. vegetable oil
2 t. vanilla extract
2 c. flour
2 t. baking soda
2 t. cinnamon
1 t. salt
1 c. raisins
Preheat the oven to 325. Grease the muffin tins.
In a large bowl, combine the apple, grated vegetables, and sugar. Add the eggs, oil, and vanilla and blend.
In another bowl, combine the dry ingredients, then mix into wet ingredients. Add the raisins.
Fill the muffin tins two-thirds full. Bake for about 25 minutes.
