Roasted Zucchini Spears

Preheat oven to 450* F.
2 medium-sized zucchini, quartered and cut into 3" long spears.
Combine 1/4 cup olive oil, 1-2 cloves minced garlic, freshly ground salt & pepper in small bowl.
Cut zucchini into spears.
Dip spears into olive oil mixture to coat.
Arrange on baking pan with sides (to prevent olive oil from dripping while roasting).
Bake 15-30 minutes until tender and lightly browned.
Transfer to a serving plate and drizzle with a fine quality balsamic vinegar.
Serve hot.
ps - Good on the grill too!

This is a terrific way to prepare this squash. I usually add some cherry tomatoes. Yummy!

These look great in this image Stephanie. I BBQ quite a bit of zucchini using the same recipe. Haven't tired the balsamic vinegar yet, and will do so next time.

Zucchini is in season and we always need new ways to fix it. I used to make a zucchini chocolate cake... (the kids never knew) and thought it was great.

Keep it simple always works. Too many years ago we grew what could best be descibed as a surplus of zucchini. When you arrived at our place you were presented with a giant zucchini and given another as a parting gift.
