Mexican flatbread pizza

A work in progress since I am still trying to figure out how to get the cheese to melt without burning the crust!

Crust = Mexican flat bread
Toppings off your choice, here I used:
Basil pesto, chopped yellow pepper, chopped red onion, sun dried tomatoes (rehydrated),
pepperoni, mushrooms, sprinkled with fresh rosemary and shredded mozzerella cheese

I nuked the onions and bell peppers so they were soft and partially cooked
Brushed the flat bread with olive oil (both side)
Placed the flat bread on the grill until one side was brown
I spread the "grilled" side of the flat bread with pesto (you could use pizza sauce)
Layered the rest of the ingredients on the flat bread, returned to the grill to melt the cheese.
This is the tricky part, getting the cheese to melt before the crust burns!

If it were in an indoor oven I would say put them on a lower rack in the oven...but on a grill outside...hummmm???? Maybe even put it under the broiler in the oven - but that would heat up your kitchen. Looks good!
