In this shop I had my daily portion of halawat el-jibn. Raw cheese is soaked, so the salt content decreases, then it is melted, stirred, stretched resulting in a cheese-based dough. That is rolled, cut and filled with kashta, a creamy dessert filling, and rolled into a cylinder. That may be cut in pieces and if things are not sweet enough topped with pistachios and drenched in honey (from the Lonely Planet guide). I developed such a liking for it in Hama, where I first ate it, I would not rest until I found it in other cities too. In hama I saw the most shops selling it, and in some cases exclusively, no other sweetmeats, let alone ice cream (though it is great with ice cream, and the quality of ice cream in Syria is magnificent). This shops had several other sweets and good ice cream indeed.
