Maple Syrup - The Apron

Barton, Vermont

The sap is boiled until it is exactly the right temperature and viscosity to be syrup. When the syrup pours out of the pan such that it forms a sheet or "apron", instead of just a constant drip, then it is at the right viscosity to be Maple Syrup.
