One of the few cold dishes in Chinese cuisine, the Chaozhou style crab is heavenly. The flesh is now more succulent and tasty as the flesh has had a chance to contract and the flavors to meld. A light vinegar dipping sauce is provided. The chef occasionally makes this dish and poaches the crab in a special broth. At Golden Taste Restaurant, 42 Bowery, NYC.
