Bacon-Blue Cheese Burgers


1# Ground Chuck
1# Ground Sirloin
4oz Blue Cheese - crumbled
1/3 Cup Minced Fresh Chives (or shallot)
1/4 Tspn Hot Pepper Sauce (your choice)
1 Tspn Worcestershire Sauce
Fresh Ground Black Pepper (to taste)
1 Tspn Kosher Salt
1 Tspn Dry Ground Mustard
Thick Cut Peppered Bacon Strips

Combine all ingredients, but the bacon, in a large mixing bowl. Do not squeeze the ground beef together, instead gently fold and kneed it until everything is uniform. Form into 8 equal patties.

Heat up a small skillet and cook the bacon. Heat up a larger skillet until very hot. Place the patties, 4 at a time in the skillet. Let them sit for about 4 or 5 minutes, depending on how well done you like them. Do NOT press down on them with a spatula or other tool. This will just make them dry. Let them sit until the end of the time, then flip and repeat.

Serve on fresh buns, wheat are the best.
