Crock Pot Sausage & Peppers

3 large assorted peppers, red, yellow & orange, seeded and cut into chunks
1 large yellow onion, cut into wedges
3 cloves garlic, peeled
Salt & freshly ground pepper
1 tablespoon minced fresh thyme
2 tablespoons olive oil
2 lbs assorted sausages, such as hot & sweet Italian & chicken & basil
1/3 C dry red wine

Put peppers in slow cooker. Add onion and garlic and toss to combine. Sprinkle with salt & pepper and all of the thyme.

Brown the sausages in a skillet in the oilve oil, pricking them with a fork as they brown.
Place sausages on top of the veggies in he slow cooker.
Add the wine to the skillet and bring to a boil, scraping up any browned bits stuck to the pan, pour into the cooker.
Cover and cook on LOW for 6 to 8 hours.
