First thing I did in Italy was start a restaurant.
Well uh.. I gave my name for it.
And I told the caretakers to open a special section for dogs.
It’s in Monclassico, close to Dimaro, in the Val di Sole,
at the edge of the Parco Nazionale Delo Stelvio (Stelvio National Park).
The local specialty is ‘speck’, a much used pork product of the Dolomite cuisine.
My humans tasted some samples here. Personally don’t care much for pork,
but you can give me a cow ear any time, or a rabbit steak of course…
