Using a hand held blender, whip:
5-6 tomatoes, red and ripe (roma tomatoes are the best)
1/4 red pepper (capsicum, aka bell pepper)
1/2 small-medium purple onion (yellow if fine)
1 clove garlic, finely chopped
1 small chili pepper
the juice from 1/2 lime
4 tablespoons of cilantro
salt
pepper
serve with tortilla or banana chips, or on toast
It also makes a nice sauce on a cold pasta salad.
