Most restaurants in Maine advertise this spring dish. New Jersey is not into this dish. There is only one kind of fern that can be used for eating. It is the ostrich fern (matteuccia struthiopteris). Since I don't know my ferns I just take pictures of what looks like the real thing in our woods.
