The pressing. The layers in the pan are placed between to metal plates mounted on threaded steel rods. The plate on top of the Dagwood sandwich is fixed. The plate on the bottom moves up and down the rods. There is a 20 ton car jack under the bottom plate. The jack moves the bottom plate upward with increasing pressure. This forces the water and oil out of the sandwich and into the stainless steel tray. There is a hole in one corner of the tray that allows the water and oil to fall into that plastic bucket. Each pressing takes about 20 minutes.
