I expose for the bright area, then boost the brightness (and maybe levels) of the dark area. This works fairly well.

It is an absolute bugger to get a proper exposure with dark (black) colours in a quick candid shot. I know, I fail to do this on a regular basis.

The contrast between black and "white" is appealing.
