Japanese rice wine (sake) can be drunk cold, warmed, or hot.
Typically, hot sake is consumed in winter and cold sake is consumed in summer.
As heating serves to mask the undesirable flavours of lower-quality sake, it is said that the
practice became popular to mask the rough flavour of low-quality sake resulting from scarcity of quality ingredients in former years.
You see, the really really good nihonsyuu is served at 10 degrees... the good stuff is served cold and you are suppose to drink it slowly.
