11/22/2016 Butterflied Roast Turkey

I dry brined the turkey for three days. I then cut the backbone in half and butterflied the turkey over cut carrots, celery and onions. I oiled the turkey skin with Canola oil and ground pepper over it. Preheated the oven to 450 degrees and cooked the turkey for 90 minutes. The breast meat registered 150 degrees. Let it sit for 20 minutes before cutting.
