Prickly pear cactus bloom yellow, red or purple flowers from May-June. After the blooms are gone the buds turn into fruit which is known as "tuna." Both the pads and fruit hold a lot of water and nutrition for wild animals and humans. For human consumption the pads are often eaten as a vegatable. The pear or "tuna" is made into jelly, especially amongst the American Indian tribes.
