I'm assuming they used photoshop. It's pretty simple. But it takes skill to make it look as good as they did.

There are a few ways, this is probably the easiest to explain here tho. Using photoshop, create duplicate layer, and turn bottom layer b/w. "Erase" the top layer of everything you want to make b/w. Or vise versa, leave bottom layer color, "remove color" on duplicate layer, then use "eraser" on top layer to reveal the color. Flatten image and you're done. :)
