After this initial process, de-pulping of first and second quality ripe berries occurs in grinders. The natural honey of the grain is then cut in the fermentation tanks. The coffee is then dried on an outdoor patio as seen in the next photo. These processes have a significant effect on the taste of the coffee.
The overall process of producing the finished coffee beans involves pulping, fermentation, washing drying, hulling or peeling and sizing or grading.
Coffee beans contain more than 100 chemicals including aromatic molecules, proteins, starches, oils, and bitter phenols (acidic compounds), each contributing a different characteristic to the unique flavor of coffee.
