1 ½ lb. extra lean ground beef or ground turkey
1 large onion, chopped
1 bag coleslaw mix (shredded cabbage, no dressing)
4 cans Rotel Tomatoes, mild (I used 3 mild, 1 original)
1 15 oz. can diced tomatoes, undrained
1 can Great Northern beans, undrained
1 can black beans, undrained
1 can pinto beans, undrained
1 8 oz. can tomato sauce
Brown meat. Combine the rest of the ingredients (too much for my 5 qt. crock pot) and simmer for 2 hours, stirring frequently. Makes 8-10 servings. Freezes well.
