Did you know dates were high in fiber? Not only delicious, but good for you! Decided to warm up the house with a bit of baking this afternoon. Tried these for the first time. A bit scary when the lemon glaze started to drip off the cookie sheet, but I managed to contain it. Next time I think I'll leave off the glaze! There's enough sugar in the cookies.
Ahah...I see it says "two 9 x 13" pans. I guess that would have contained the glaze! Something with a rim!
Preheat oven to 350°.
Grind 1 cup nut meats (I used a mini processor) (I used walnuts)
1 cup seeded dates
Sift:
1 cup sugar
Whip until stiff but not dry:
2 egg whites
1/8 tsp salt
Add the sugar gradually. Whip constantly.
Fold in:
1 tbsp cream (I used half and half)
Sift before measuring:
1 cup all-purpose flour
Resift with:
1 tsp double-acting baking powder
Fold in the sifted ingredients, the nuts and the dates. It may be necessary to combine them with the hands. Grease and flour a baking sheet. (I used parchment paper. Didn't have to grease or flour.) Place the batter on it and pat it down to the thickness of 1/4 inch. If the batter is sticky, dip the palms of the hands in confectioners' sugar. Bake for about 10 minutes. Spread while hot with lemon glaze. (1 1/4 cup confectioners' sugar + 1/4 cup lemon juice and 1 tsp vanilla whisked till smooth) Cut into bars while hot. I put the pieces on a rack to dry off and will freeze them in layers with waxed paper between them.
