I'll know tomorrow if this apple noodle kugel tastes as good as it looks...if it's good, I'll post the recipe! Follow up: Wasn't as good as the following recipe, containing crushed pineapple, which I think came from Joel Siegel, movie critic on Good Morning America, several years ago:
(I've changed several of the more fattening ingredients to "lighter" versions.)
Boil one lb of wide noodles while you combine the following ingredients:
one pint "lite" sour cream
16 oz 1% fat cottage cheese (preferably creamed)
3 oz cream cheese (lite)
1 cup fat free half and half
6 beaten eggs
1 8 oz can crushed pineapple
2 peeled golden delicious apples, thinly sliced
1 cup golden raisins
1/3 cup sugar
1 tsp vanilla extract
1 stick butter, melted
1/2 tsp ground cinnamon
Toss with drained noodles. Bake uncovered in a a greased 9 x 13 baking pan in preheated 350 degree oven for 90 minutes.
If you want it to be SUPER delicious, don't use the low-fat ingredients!
