When tomatoes are delicious and plentiful and I have more than I can use before they spoil I will scoop out the insides, mash them and add them to a mix of diced onions and garlic sauteed in olive oil, mixed with Italian seasoned breadcrumbs, fresh chopped parsley, parmesan cheese, salt and pepper. The stuffed tomatoes are placed in a 350 degree oven for about 15 minutes. (Tonight I added some chopped frying peppers since I had several on the deck...first time I added pepper...pretty good!)
