This is why the Nikon D5000 is the better video camera - you can set your own shutter speed, or aperture, and ISO rating and thus get frozen action frame by frame. This is impossible with the Canon EOS 500D (new firmware has just enabled it for the 5D MkII). The Canon works on a programmed exposure for videos, and prefers very generous exposure times combined with smaller apertures - and a combination of high ISO and small aperture for telephoto shots similar to this.
