Baked Omelet – Sfougato


¼ Cup Unsalted Butter
1 Large White Onion, chopped
1# Loose Italian Pork Sausage (or any lean ground meat)
1# Zucchini, peeled & diced
2 Tablespoons Fresh Parsley, finely chopped
¼ Cup Fresh Dill, chopped
1 Cup Hot Water
Kosher Salt & Fresh Ground Pepper
8 Large Eggs, beaten
Dried Bread Crumbs
Feta Cheese

In a 12” cast iron skillet melt the butter over medium heat and then cook the onion until it’s nice and soft. Add the loose sausage and cook for about 10 minutes, until it’s all browned and broken up. Add in the zucchini, parsley, dill, and hot water, season to taste with the salt and pepper. Stir until it’s all well combined, cover, reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

Preheat the oven to 350

Transfer everything into a large mixing bowl and drain off as much excess luiquid as possible. Beat the eggs into the mix.

Sprinkle the bread crumbs lightly onto the bottom of a buttered casserole and then pour in the eggs and meat mixture. Bake until the eggs set, about 25 minutes. Serve warm with feta cheese sprinkled on top.

That looks like a pretty delicious kosher meal! How long did it take to make it? I'd like to have a kosher meal, but I really don't want to make it. I think I'm going to go to a restaurant and ask for something like this. I'm just hoping they'll be able to make it!
