1# Pork Loin
1/4 of a fresh Pineapple
1 Tbsp Peanut Oil
4 Cloves Garlic, Chopped
Small Bunch of Green Onions, Sliced
1 Tbsp Fish Sauce
1 Lime, Juiced
1/2 Cup Fresh Cilantro, Chopped
3 Tbsp Fresh Mint, Chopped (plus a few leaves for garnish)
Slice the pork into thin pieces across the grain of the meat. Trim the skin off the pineapple, quater lengthwise, remove the center and then cut the remaining flesh into bite sized pieces. Keep a 1/4 of this for the dish.
Heat the wok over medium high heat. Once hot, swirl in the oil. Add the garlic & onions, cooking for one minute then set aside.
Reheat wok and cook the pork in batches until the meat is just cooked. Once all the meat is cooked, return the pork, garlic and the onions to the wok. Add the pineapple, fish sauce and lime juice. Toss to combine and heat up all the ingredients.
Remove from the heat and toss in the cilantro and mint, then serve with steamed rice.
