Be careful with lower light output though, it could mess the WB a lot. But with your lights you shouldn't worry, they are quality ones.

Thanks for the pointers Aam. I read the thread. Nice info. It reiterated what I said. You will need 1/1000 or faster to freeze water motion.(1/300 is not predictablly enough)
You can freeze water with low output flash too (with studio strobes, use 1/8 or 1/16 power and you'll get upto 1/5000 flash duration. At full power it drops to 1/300 or lower.
Regarding sync speed, it cannot be set higher than your camera allows. I use 20D, which allows me up to 1/250 only. if I go higher, I'll get black bands on my photo (shutter-shadow) I use pocket-wizard which does not compromize the synce speed for me.
If I have to freeze motion, continuous light like sun or hmi or tungsten is best. Do not use fluorecent light (tube-lights) they have a flicker of 50-60Hz and thus are unpredictable for high speed motion. Plus while flickering the light changes color from light green to light pink too, which is bad too!

Cat, shutter below the sync speed is irrelevant with strobes, because the strobes will be the effective shutter. The 1/5000 sec you mentioned is for on-camera flashes or specialized strobes.

Techo/Aam, this was taken outdoors in broad daylight. So I could go up to 1/2500 (f4.5) which is excellent. With studio flash, the flash can to up to 1/5000 but the sync speed is max 1/250 for 20D, don't know if newer camera have gotten any higher or not. (note: with studio flash xf will show only what is set in the camera (1/250) )

Techo, the light (strobe or flash) will act as the effective shutter. If Cat used strobes then we are talking around 1/300 sec.
