What do you do when it's raining too much to go to work? Bake a cake of course!

This one is low calorie & high in nutrition . . . .so I ate the whole thing =)

Use 1 pkg of cake mix (I used Spice Cake) and 1 15 oz can of pumpkin (not pumpkin pie mix. just pumpkin)
It may seem a bit thick, but don't add any water or anything else. It comes out just fine.

That's it . . . no eggs, no oil . . . and a LOT fewer calories

Bake for 25 min in a 350º oven
It's amazing how moist & flavorful the cake is
I used fruit instead of frosting =)
