This is a tasty surprise!
Pre-cooked the Sweet Potato until just beginning to soften.
Added some Maple Syrup and Garlic ; a can of Baked Beans,
Some sliced Mushrooms and Onions.
Mixed a box of Jiffy Vegetarian Corn Muffin Mix
according to directions. Poured into baking pan.
Scooped Sweet Potato, Bean mixture onto top of Cornbread
Baked in preheated oven for 30 minutes at 400F
(As a “Leftover,” reheated with some Low Sodium V-8 Juice,
this is extra delicious. )
