This is easy in the Crockpot on HIGH
Started with V-8 juice in the bottom of the pot;
Add 1/2 Cup Barley and or Rice
1 Can Chickpeas
1 Can Red Beans (drained)
And layered Vegetables including
Chopped Onion
Sliced Potatoes
Sliced Mushrooms
1 Can Diced Tomatoes
Sliced Carrot
Handful of Spinach
Peas
Cauliflower (1 bulb) sliced
Add @ Cup water or enough to see but
Not cover the vegetables completely
Garlic
Basil
Pepper
Salt
Oregano
1 TBSP Lemon Zest
A few Cranberries
Cook until carrots and potatoes are tender.
Check halfway through and add liquids if needed.
Served with Whole Wheat toast and choice of
Homemade Seed Crackers (recipe below)
