Simmering Spaghetti Sauce

I was making spaghetti sauce for dinner tonight. Taken with my Pixel 9 Pro smart phone; the one I had at hand when the thought struck me. I'll have to see how this "additional style" develops with time and practice.

I find slow simmering sometimes produces the biggest - and messiest - bubbles (depends on what's cooking). Stirring seconded.

Dave - yes, You can get some "range" out of some of these bubbles if you get them into a good boil. I've cleaned the countertops more than once.
I have learned the right simmer temps for various foods, and also that stirring the pot once in a while does wonders.

Those big bubbles got range (no pun intended). I love our gas burners' low simmer. The sales guy demonstrated by placing a piece of paper over one. It didn't catch fire, and no I would never attempt to repeat the feat.

No mess resulted.
I cook on a gas burner where it is easy to control the simmering with boiling and huge bubbles.
I simmer first without a cover to thicken the sauce, then later cover it.

The secret - don't walk away and always keep an eye on it.
