08 The Art of a Broken Promise

Rainbows are supposed to represent a promise, but, sadly, this establishment (Under the Sun) is closing down tomorrow, after 11 years in our neighborhood. It's very sad. They make the best pizza in Boulder, and have a great beer selection. Luckily, their sister brewpub (the Southern Sun, just above it) remains open. We are heading to Under the Sun tonight for one last time. :(

There has been much discussion on the neighborhood email list about why they are shutting down. The official explanation is that "continuing our operations is no longer sustainable", and "closing our doors is the most responsible course of action at this time.. allowing us to focus our resources and energy on enhancing the experiences at our other locations." They have two other location in Boulder (one right above this one), one in Denver, and one in another neighboring town (I've forgotten where). But this was the only one that specialized in pizza. They had vegan cheese options, and made an amazing vegan supreme pizza, with lots of veggies and Impossible sausage. A cheap, and pretty good, taco and burrito place just opened up in the same plaza, with a five hour happy hour (happy five hours), and pretty good margaritas, so that might have had something to do with it. Still, every time we went to Under the Sun, it was pretty crowded, so it's hard to believe that they were hurting for custom. Lots of restaurants in Boulder come and go. The rent is truly exorbitant, and the major landlords here seem to be particularly avaricious. My thought is, once you've made your first hundred million, do you really need to keep gouging for more? Apparently, the answer is yes. My wife and I own a rental house about a mile from where we live, and we've had the same tenants for nine years now. In that time, we've put the rent up once (last year, after eight years at the same rent), and even then it was by less than 5%. We are currently getting almost a thousand a month under market rate, but we love our tenants, and want to keep them. I guess that's why we'll never be multi-millionaires. But, on the bright side, we'll never own casinos that go bankrupt either (how is that even possible?).

Do you know why they are shutting down? “The best pizza in Boulder” sounds like an excellent business model and should provide them with plenty of business.
I assume since you guys ate there then they must have offered vegan cheese, diversity is always a plus. Paul
