I grew up in rural Kansas and we had a small number of chickens for a while, 15 to 20 or so and I certainly remember the annoying roosters in the mornings. While I have trouble recalling many details since I was like 10 ish but I clearly remember chicken sh!t on some of the eggs we harvested. We didn’t wash them either seems like there was a protective membrane on them. If we didn’t find the eggs soon enough then you had to candle them to see if a embryo was growing in it.

Fun fact - did you know that here in the UK it is AGAINST THE LAW to wash/clean supermarket (superstore?) eggs prior to selling?

Eggs were cheap at $1.20 per dozen. A dime each? They're still a bargain at 20 or 30 cents.

They certainly have improved over the years. Just Egg makes a really good scramble or omelet. It's made from Mung beans (wasn't that a character from Flash Gordon?), and has the same amount of protein as hen's eggs, but less (as in no) cholesterol. It works for baking too, but I usually use a different egg replacer for that. Just leave some for me, OK?

Thanks for the tip Alastair, searching Walmart’s app as we speak. Wait my vegetarian daughter has some in the freezer now. Could do powdered eggs but I remember those from my army days, maybe they have improved over the past 50 years…. Paul

On the one hand, we vegans are feeling pretty smug now that our vegan egg substitutes (like Just Egg) are almost cheaper than hen's eggs. On the other hand, we are starting to resent the non-vegans who are buying our food. :) The last couple of times I've been at the grocery store, I've bought four bottles of Just Egg, instead of my usual two, just in case all the desperate egg junkies turn to my product as their methodone, and empty the shelves!
