Stir-Fried Beef with Mangetout and Cashews

In a dry frying pan, toast raw cashews until tinged with brown and set aside. For the cooking sauce, mix a Tbs soy sauce
with a tsp cornflour, then stir in 2 Tbs oyster sauce, a Tbs rice wine vinegar and a Tbs honey. Set this aside.
Cut a small onion top to bottom into slivers, crush a clove of garlic and cut a piece of ginger into matchsticks.
Thinly slice fillet steak across the grain and fry very quickly in very hot oil, for just a minute. Add the onion,
ginger and garlic, stir everything together for a minute, then add mangetout cut in half on the diagonal, together
with the sauce. Stir fry everything together for another minute, then sprinkle over the cashews and serve with rice.
