A good recipe for using up leftover baked ham. Cook some basmati rice beforehand, drain well and spread out on a baking sheet
to cool and dry. Cut and pull cooked ham into small bite-sized pieces and set aside. Fry chopped onions (or shallots) together
with chopped garlic and chopped ginger, until just starting to soften, then add the pulled ham and fry for a couple of minutes,
seasoning with a splash of light soy sauce. Scoop to one side of the pan and add a couple of seasoned beaten eggs to the other
side, stirring to scramble, breaking up the curds as they cook, then mix in with the ham. Add the cooled rice and a handful
each of frozen peas (defrosted under running hot water) and bean sprouts, together with some coriander leaves. Stir together
until piping hot and serve on warm plates.
