Orange Curd Cheesecakes

Crush 180 g digestive biscuits in a food processor to fine crumbs, mix with a 3-4 Tbs melted butter
and spoon into individual glass dishes, pressing down with the back of a spoon. For the orange curd mixture,
beat together 300 g softened cream cheese with 100 g icing sugar and a jar of orange curd. Spoon onto
the biscuit crumb crust and chill for a couple of hours in the refrigerator. To serve, top with orange segments.
You could also make these with lemon curd, of course!
