Cook gnocchi according to the packet directions. In a large bowl, mix together 2 Tbs honey, 2 Tbs olive oil,
2 Tbs Thai red curry paste, 3 Tbs peanut butter and a sprinkle of salt, then add chicken thighs cut into chunks.
Mix well, then tip into a roasting dish together with a head of broccoli cut into small florets, a small red onion
cut into wedges and the drained gnocchi. Bake for 30 – 40 minutes, turning once or twice, until the chicken is cooked.
Serve garnished with chopped peanuts and corander, with a squeeze of lime juice.
