Sale di Cervia - salt from Cervia - is produced from these salt flats, now one of the last artisanal salt flats in Italy.
Salt production here dates back more than 2000 years - the name of the town comes from the Latin "acervus" meaning
a mound of white salt, called white gold. The gournmet salt is harvested by hand from these small salt pans, using
wooden rakes, much in the same manner as the Etruscans did 2000 years ago. This sale di Cervia is the one used in
salting two famous products of Emilia Romagna - Parmigiano Reggiano and Proscuitto di Parma.
