Turkebono
by

A wee little 32.8 pound bird with a rub of rosemary, sage, thyme, blueberry, orange zest, sea salt, and white pepper. The chain is used for lifting it out of the roasting pan. It was brined in a 18 gallon rubbermaid tub with another 14 pound turkey. It isn't the largest that I have ever cooked.

Do you brine a bird that size in the bathtub?

Chain is for lifting monster out of the pan. Cheap stainless steel chain under bird makes it easy to lift out.
