The bacon you can buy in the UK beats hands down what we buy as bacon in Australia. Many Australians come back from holidays there raving about the bacon.

I totally agree. For lunch today I minced "natural" bacon (no nitrates, antibiotics, growth hormones) and placed it in a wok to render and crisp it a bit and then added some minced garlic, shredded carrots, chopped onion, and shredded cabbage. Stir fried it on my wimpy gas burner (wish it was hotter) and then added some ground shiitake mushroom powder which adds a ton of flavor. Stir fried it well to disburse the powder and turned the burner way down low while I poiled some thin pasta (capellini or Angel Hair). Oh yes...the bacon fat stays in the wok. Drained the pasta and tossed it with the other ingredients, with the burner turned up, and then added some Maggi for flavoring. Alternatively I have used Golden Mountain Sauce or Light Soy Sauce for a bit of flavoring. This is one of our favorite main dishes. The bacon makes it fabulous. Sometimes I've added sliced green onions, and/or pine nuts to the mix. Give it a try if you love bacon! Your bacon looks fabulously meaty!
