Sangiovese grapes are used in many Italian wines notably Chianti. Brunello's are composed 100% Sangiovese making it complex to produce great wine due to the high acidity and light body of this varietal. Winemakers in Montalcino age this fine wine in specially selected oak barrels. To be called Brunello, the wine must generally age 3 years (minimum 28 months).
