Maple syrup has 3 colours.
Clear or light golden colour. That is the first syrup of the season, the first 2 weeks or so. Dark means it was collected at the end of the season. The best one is the earlier one, it is sweeter. Then the BIG companies buy it by the ton in HUGE 45 gallons barrels from all the maple syrup collectors, they boil it again and mix it all together to get "an average" and thus ... Canada No. 2 amber colour.
